A Market That Spends Almost Everything in Three Weeks
Passover is the largest consumer spending event in the observant Jewish calendar, and in the US it concentrates in dense clusters: Brooklyn and Rockland County, Lakewood, Baltimore, Chicago's West Rogers Park, and the Los Angeles Pico-Robertson corridor. A household that buys nothing unusual for eleven months will replace cookware, cover every counter, and buy or rent a kashering appliance in the three weeks before the holiday.
That compression is the whole engineering brief. Products here rarely fail because the mechanism is wrong. They fail because inventory landed in April, because a rabbinic authority would not grant a hechsher in time, or because the duty cycle was designed for year-round use when the real one is fourteen days of abuse followed by eleven months in a closet.
Four Product Families, Four Different Engineering Problems
Hot-water kashering equipment. Immersion tanks (hagalah) that hold water at a rolling boil while utensils are lowered in, and blowtorch or electric libun rigs that bring steel to a glow. These are the most demanding items on the list: sustained boiling for hours, splash-hot water near consumers, and often outdoor use in a synagogue parking lot. Design to UL 197 or UL 1082 territory depending on the heating architecture, and assume a wet, grounded, GFCI-protected environment.
Covers, liners, and separations. Counter covers, sink inserts, stovetop blechs, oven liners, and range-top separators. Cheap to make, brutal on materials: an oven liner sits at 500F (260C) for hours, and a blech carries a pot on a burner overnight. Material selection is the entire product here, and getting it wrong means a melted liner and a product-liability claim.
Dedicated Passover cookware and small appliances. A second set of everything, used two weeks a year and stored the rest. Buyers accept lower build quality than a year-round item but not anything that arrives rusted from storage, so specify finishes and packaging for eleven-month dormancy rather than for the shelf.
Cleaning and inspection tools. Crumb vacuums with narrow crevice geometry, UV inspection lights, and bedikat chametz kits. Low-margin individually, high attach rate, and the natural first product because tooling cost is small.
Kashering Equipment: The Hard Engineering
A commercial hagalah tank is a pressure-free, high-thermal-load appliance that is used hard by non-technical operators. The specification points that decide whether it survives:
- Element sizing. Recovery matters more than peak temperature. A tank that drops below boiling when a basket of cold flatware goes in is halachically useless for that immersion. Size for the thermal mass of the largest expected load, not the water volume.
- Material. 304 stainless is the floor; 316 if the operator will ever add anything to the water. Weld quality on the inside seams determines whether the tank looks acceptable after two seasons.
- Dry-fire protection. The single most common field failure is an element energized in an empty or half-empty tank. A float or thermal cutout that latches off is not optional, and a UL evaluator will ask about it first.
- Overflow and scald management. Immersion baskets displace water. Design freeboard and a routed overflow, and keep the operator's hands away from the boil line with a lever or crank basket lift.
- Portability. Most of these units get moved. Budget the empty weight so two people can carry it, and put the drain where someone can reach it before lifting.
Libun rigs, which glow-heat metal rather than boil it, face a different problem: radiant heat on nearby surfaces, plus combustion products if the design is gas-fired. Gas-fired indoor use pulls in a far heavier certification burden, which is why most consumer libun products are electric or explicitly outdoor-only.
Covers and Liners: Material Selection Is the Product
The temperature ladder here is unforgiving. Standard PET and PVC films deform well below oven range. Aluminum foil-faced products work but tear. High-temperature silicone sheet holds to about 450F (230C) continuous, PTFE-coated fiberglass to roughly 500F (260C), and above that you are in metal. Anything touching food has to be a compliant food-contact material under FDA 21 CFR 177, which is a documentation exercise your supplier should be able to satisfy on request. The reasoning is the same as any other product that lives in a kitchen, and the material tradeoffs in food-grade plastics for products apply directly.
Test the way the customer will actually use it. A liner rated for 500F in a lab oven behaves differently under a self-clean cycle, and a stovetop cover behaves differently with a pot on it for eighteen hours. Run the real abuse case before you commit to a roll of material, using the same logic as any other kitchen product development program.
Passover Mode in Appliances
Major appliance makers already ship Sabbath mode firmware. Passover mode is a further step: disabling automatic self-clean prompts, suppressing display changes, and in some ovens locking out convection fans or catalytic cycles that would spread residue. The work is not large; the approval is the long pole.
Certification and the Rabbinic Gate
No amount of good engineering sells a Passover product without a hechsher from an authority the target community trusts, and Passover certification is stricter than year-round kosher certification. Approach a certifier while the design is still soft, not after tooling. Expect questions about materials in contact with food, about whether any part absorbs, and about whether the operating sequence itself creates a problem. Layer secular certification on top: UL or ETL listing for anything that plugs in, NSF for institutional kashering equipment sold to caterers and schools, and CPSC compliance for anything a child could reach.
The Seasonal Calendar Kills More Products Than the Physics
Work backward. Distributors and community retailers place orders roughly six months before the holiday. Overseas production plus ocean freight is a twelve to sixteen week block on its own, and it collides directly with the Chinese New Year factory shutdown, which sits in exactly the wrong place on this calendar. That means tooling signed off almost a year ahead of the selling season, and a single missed mold trial can cost you the entire year.
Plan inventory accordingly. Unsold Passover stock is not written off, it is stored, so the cost of overproducing is a warehouse bill rather than a loss. Underproducing costs the whole season.
