The small symbol on a package — the OU in a circle, the K in a star, the OK — looks like a graphic element. It is not. It is a registered trademark licensed to you under a contract, backed by an inspection regime, and revocable. Printing it without a valid certification is trademark infringement and, in a community where a single social media post travels through Brooklyn, Lakewood, and Monsey in an afternoon, a brand-ending mistake.

The agencies

Five national agencies dominate US kosher certification, alongside dozens of regional authorities.

  • OU (Orthodox Union) — the largest by a wide margin, with the broadest acceptance and the deepest bench of field inspectors.
  • OK (OK Kosher Certification) — Brooklyn-based, strong in ingredient supply chains.
  • Star-K — Baltimore-based, and the agency most associated with appliance and equipment certification.
  • KOF-K — New Jersey-based, very active with manufacturers and co-packers.
  • CRC (Chicago Rabbinical Council) — strong in the Midwest.

Acceptance is not uniform: a hechsher that satisfies a mainstream supermarket buyer may not satisfy a Hasidic retailer in Williamsburg. Ask your intended distributors which symbols they require before you choose, because switching later means re-certifying and re-printing every SKU. What the agency requires from you

The process is closer to a quality audit than a rubber stamp.

  1. Application and full disclosure. Every ingredient, processing aid, release agent, lubricant, filter medium, and cleaning chemical that touches product — the complete formula, not the label declaration.
  2. Supplier certification letters. Each raw material must itself be certified, with a current letter naming the exact product and the manufacturing plant; a supplier's corporate certification does not cover a plant it does not name. This is the step that stalls the most applications.
  3. Plant inspection. A rabbinic coordinator walks the facility, maps the equipment, and traces product flow. Shared lines, tanks, heat exchangers, and CIP systems all get examined.
  4. Equipment status and kashering. Equipment that has run non-kosher or dairy product may need kashering — a supervised heat or steam treatment — before certified production begins.
  5. Contract and fees. An annual agreement covering license, inspection frequency, and renewal. Costs for a small manufacturer run from a few thousand dollars into five figures depending on plant complexity, SKU count, and inspector travel.
  6. Ongoing unannounced visits. Certification is continuous, and some categories require a full-time on-site mashgiach.

Status designations belong on the label

The symbol alone is incomplete. The status suffix printed next to it tells the consumer what the product may be eaten with, and it drives real purchasing decisions.

Note that the P does not mean pareve; confusing the two is a classic first-time error. Pareve status is often worth engineering for — a dedicated line or tank, or reformulating away from a dairy-derived ingredient, can widen your addressable market enough to pay for itself.

Passover is a separate annual process

Passover certification is not a checkbox on your regular certification. It is a separately scheduled program requiring dedicated production runs, additional kashering, ingredients that are themselves Passover-certified, segregated storage, and separate labeling with its own approval cycle. Production is scheduled months ahead, because inspectors are in extreme demand before the holiday. Artwork rules that will get your print run rejected

Every agency publishes usage rules and enforces them. The recurring ones:

  • Nothing prints before written approval. Submit final artwork and get sign-off in writing. Agencies routinely reject packaging already on a press.
  • The symbol may not be altered. No stretching, recoloring, effects, or redrawing it to match your brand. It is a trademark and must appear as licensed.
  • Placement is regulated. Most agencies require the symbol adjacent to the product name on the principal display panel, not hidden near the barcode.
  • The status suffix must be legible. A 3-point D beside a large symbol is a violation, not a design choice.
  • Certification is per SKU and per plant. Adding a flavor, a size, or a co-packer means a new approval.
  • Lot and plant coding that traces a run back to a supervised batch is commonly required.

Because approvals gate the print schedule, kosher review belongs inside the normal packaging design timeline rather than after it. The approval loop typically adds two to six weeks and is a hard dependency.

Packaging materials and the line itself

Primary packaging that contacts product is part of the audit. Coatings, slip agents, and release agents on films and liners can be animal-derived, so film and container suppliers may themselves need certification letters. Anything reused between runs — hoppers, totes, conveyors, fillers — must be shown to be dedicated or properly kashered between statuses. Equipment certification is a different animal

Certifying an appliance is not certifying a food. When Star-K or another agency approves an oven, refrigerator, urn, or coffee machine, it reviews engineering behavior: what the control board does when a door opens, whether a compressor start follows a user action, whether a display changes state, how a Sabbath mode disables adaptive algorithms. The deliverable is a reviewed product design, not an inspected batch, and the review requires schematics, firmware behavior, and often a physical unit in the agency's lab. The maker must then keep that behavior stable across firmware revisions. The ruling always belongs to the agency and its rabbinic authorities; the manufacturer's job is to build and document a mechanism they can evaluate.
